Bon Soir Souffle (Good Night Souffle)

Servings: 2

Preparation time: 15 minutes

2 slices sourdough French bread slice

1/2 cup liquid egg substitute

1/4 cup Swiss cheese, shredded

3/4 cup evaporated skim milk

1 tablespoon fat-free sour cream

1 tablespoon chopped green onions

Cut bread into 1-inch cubes. Combine egg substitute, milk, sour cream and green onions and mix well. Alternate layers of bread cubes and cheese in an ungreased 3-cup casserole. Pour liquid mixture evenly over bread and cheese.

Cover and refrigerate overnight. Bake in a preheated 350 degree oven for 40 to 50 minutes (325 convection for 32 to 40 minutes) until puffed and golden. Bon jour!

Note: Prepare this “bon soir” souffle the night before, and wake up to a “bon jour”.

With Valentine’s Day quickly approaching, we begin to think, “What can I do for the one I love?” Many couples will go out for dinner, and that’s charming (the restaurant owners love it too!), but, sometimes it’s fun to do something a little different; and doing two events is even nicer. After the dinner out on Thursday night, why not plan a surprise for Saturday morning. I call it breakfast in bed.

These recipes can be made ahead and reheated quickly, and there will probably be kisses for dessert.
